Mother’s Day Frittata
Blythe Beck, Executive Chef
Frittata (Feeds 4)
½ cup bell peppers, diced
½ white onion, diced
½ cup mushrooms, sliced
1 tablespoon cream (optional)
6 eggs, beaten
1 teaspoon olive oil
Salt to taste
Preheat oven to 350F.  Crack eggs and beat with cream.  Sauté onions and peppers in olive oil for 2 minutes. Add mushrooms  sauté and season.  Add eggs, spread out in your pan and season the egg mixture.  Place your pan in the oven and bake for 20 minutes or until the frittata has cooked throughout.  Cut into serving and serve.  These ingredients are optional and can be changed to whatever you have in the fridge.  Leftovers are a great option for this dish.
